CRANBERRY PUMPKIN MUFFINS


Mix together in a large bowl:
3 cups all-purpose flour
4 tsp. pumpkin pie spice (see note at end of recipe)
2 tsp. baking soda
1 ½ tsp. salt
3 cups white sugar
Add to the above and mix until combined:
2 cups pumpkin puree
4 eggs
1 cup oil
½ cup orange juice
Fold in 1 cup fresh, frozen or dried cranberries.
This can be baked in a loaf pan or as muffins at 350F
Muffins will take about 20 minutes but a loaf will take 45-60 minutes depending on your oven.
NOTE: To make Pumpkin pie spice, mix together the following & use the amount you need in the recipe.
2 tsp. cinnamon
1 tsp. ginger
1 tsp. nutmeg
½ tsp. cloves
We have a few bags of fresh cranberries from Bala.
