Note: It is better to buy small amounts more often and we try to have Spice week every 3-4 months.

Spices do not go bad, they just lose their flavour. If colour is faded and smell is not fresh with distinct taste, replace with new.

SUBSTITUTION:
A GENERAL GUIDELINE IS AS FOLLOWS:
1 tsp. Dried= 1 Tbsp. Fresh
1/8 tsp. Garlic powder= 1 clove
1 tsp. Onion powder= 1 onion
¼ tsp. Ground ginger=1 tsp. Chopped fresh ginger

In recipes where the main ingredient is an herb [such as pesto]
dried herbs should not be substituted as taste and texture will not be the same.

GARLIC
Worldwide favourite originated in Central Asia. There are many varieties of garlic, including Mexican, Italian and Asian.
Used to spice a wide variety of dishes, it also has important medicinal value as it contains antibacterial and antifungal substances. Garlic also helps lower blood pressure and cholesterol levels, improves digestion and may be used externally as an antiseptic.

CURRY LEAF
Natural to India.Roots, bark and leaves of the Curry tree are used medicinally both internally and externally. Internally, curry will help balance the energy flow of internal organs, decrease heat in the Liver and improve the immune system. Externally, curry leaf may be used for general pain control and to reduce skin dryness.

CHILLI
Spicy favourite provides the pungency or heat to regional food.
In terms of natural healing, chillies may be used to improve body heat and circulation. They may also be helpful in balancing the energetic flow of the organ systems and for general pain control.
Chillies have antiseptic, antiviral, antibacterial and antiparasitic properties and may also be used to cleanse the gastrointestinal tract .External application of chilli paste is excellent for pain control and improved circulation.

TUMERIC
Member of the ginger family. In India widely used as a dye for cloth. When Tumeric is mixed with curry powder it enhances the taste. Care should be taken not to stain clothing ,kitchen counters, wooden bowls or utensils when using either fresh or dried tumeric. Used as an antifungal, also used today for immune enhancement and is known to be a powerful antioxidant.Used externally by putting it on burning charcoal in which case the fumes are antiseptic and spiritually cleansing.

GINGER
400 varieties in the ginger family. Widely used for medicinal purposes in Southeast Asia ,improves digestion, to counteract diarrhea, nausea and vomiting. Ginger may also be used externally as an analgesic and as an antiseptic or to improve circulation.

All spices are precious, valuable, offer flavours, colours and medicinal properties that make them treasures worldwide.
Many of the spices mentioned above are also used for spiritual and sacred purposes. Since spices are sibling to herbs, it's no surprise that they work together with herbs to enhance the quality of life as well as physical, mental and spiritual well-being.
